ingredients
- 6 medium Potatoes, scrubbed and grated
- 1 medium Onion, grated
- 2 cloves Garlic, minced
- 2 Eggs, lightly beaten
- 1/3 cup Flour
- 1/2 tsp Salt
- Cooking Oil or Bacon Fat (definitely use the bacon fat)
- Combine the potatoes, onions, garlic, eggs, flour and salt.
- In an electric frying pan (350) or a frying pan over medium heat (we used a cast iron pan), add 2 tbsp oil or fat per batch.
- Using a 1/3 cup, scoop the mixture and spread into a flat circle on the pan. Flatten out a but to about a 5-inch diameter cake.
- Fry for about 2 minutes per side, or until golden brown and crispy around the edges.
- Transfer cakes to a warm plate or keep warm in the oven. Best served immediately.
